Vietnam: The Ultimate Outdoor Market Experience

In Vietnam, the markets offer only the freshest in produce, meat, and seafood…

Outdoor markets in Asia are remarkable. Not only is the produce beautiful and crisp, but the meat is some of the freshest I’ve encountered.  And when I say fresh, I mean the animal has been slaughtered that morning, and makes for a beautiful array of glistening pieces including all cuts and offals like hearts, kidneys, and livers of the highest standard on display. And since refrigeration is a luxury most people can’t afford, everyone goes to market three times a day, cooking the food fresh at every meal.

Going to market in every city I visit is one of my favorite pastimes, and every time I’ve gone back to Hanoi, Vietnam, I’ve always stayed at the Metropole  Hotel with that in mind. Built in 1901 and French Colonial in style, it is centrally located and near outdoor markets I’ve enjoyed visiting time after time. On one occasion, while strolling through the market aisles lined up with vendors selling fresh produce like beetle nuts, dragon fruit, and water spinach, for example. I came upon a fascinating young woman, probably in her late twenties to early thirties. Her long silky black hair caressing the back of her charcoal gray ao dai (a traditional dress), she was known as the eel lady. (more…)

The things I’ve seen in my travels would make some run…

I’ve always said that if I stopped traveling tomorrow it would be okay because I’ve been fortunate enough to have visited many parts of Asia, Europe, and North America. But every once in a while I get the urge again, and getting on a plane and going to a far away land is all I can think about. When I travel, I get inspired…to see new things, meet new people, eat familiar and new foods is a great feeling. When I travel, I start to breathe again.

I’ve been traveling solo for the better part of 15 years. I’m a backpacker at heart. I travel with lots of camera equipment and a few changes of clothes, and tend to walk every where I can. I like to move relatively slow because I want to take the time to absorb everything that I come across. And while it gets lonely on the road at times, it affords me all sorts of opportunities to meet people. Now my mom always said “don’t talk to strangers.” Well I did follow her advice for a long time, but once I started traveling on my own, that pretty much went out the window…and talking to the wall has never been an option for me. I like to strike up conversations with the locals, asking them all sorts of food questions. And asking “what’s this?” while pointing with my fingers in open air markets or sidewalk food carts, for example, will be rewarded with all sorts of foods to try and more importantly discuss. Now granted many of my conversations, especially in Asia have required an interpreter or some clumsy form of sign language, which I make up as I go along. The good thing is that food is THE universal language. It’s sensual, and everyone gets it! (more…)

And then there was blogging!

In 2007, I was invited to participate as a guest chef at a Kingsford Charcoal event in Arizona. Along for the ride were celebrated chef Aaron Sanchez (chef/owner of Centrico in New York City), 10-time world champion bbq pit master Chris Lilly (Big Bob Gibson BBQ, Decatur, Alabama), and cookbook author Rick Rodgers, who has written too many cookbooks to count. It was a 3-day press event. To my surprise, more than half the people in the audience were bloggers.

My friends have been asking me to start a blog for as long as they’ve been asking me to open my own restaurant…years! And for many years, I resisted both ideas, which I find rather daunting. So here I am, a new website (thanks to Greg Takayama) with a new blog page because according to some, I’ve got a lot to say about food…
